Ingredients
180g white chocolate
½ cup butter
6 scotch finger biscuits
½ cup lightly roasted pistachios
½ cup dried cranberries
¼ cup shredded coconut
Icing sugar, to dust
Method
Melt the butter and chocolate in a large bowl. Roughly chop the scotch finger biscuits.
Add everything to the bowl and mix well to combine.
Take a large piece of cling wrap and place the mixture in the centre. Carefully roll up the cling wrap to form a log shape and roll it continuously back and forth to tighten the cling wrap. Place in the fridge for 2 hours to set completely. Once set, dust over some icing sugar.
To gift wrap, remove it from the cling wrap and place it on a large sheet of baking paper. Carefully roll it up and twist the sides to create a bon bon shape, then use some ribbon or twine to secure these shut.
Note: use a large piece of baking paper to roll up the log as the oils from the butter can leak through and leave oil stains on the baking paper.
