Vietnamese Pork Bowls

These Pork Bowls are such a winner! They're incredibly easy to prepare, packed with fresh flavours, and most importantly, an absolute party in your mouth! They're perfect for busy weeknights or when you want something quick yet satisfying so be sure to give this one a go!

Ingredients

300g thick vermicelli noodles

Cos lettuce

1 cucumber

1/2 cup coriander (can also use mint)

1 lime


Pork mince:

500g pork mince

2 tsp Chinese five spice

1/2 tsp ground coriander

3 tbsp soy sauce

2 tsp honey

2 garlic clove


Pickled red onion:

1 red onion

3 tsp vinegar

1 tsp honey

2 tsp water


Dressing:

1/2 red chilli

1 garlic clove

1 tbsp fish sauce

2 tsp lime juice

1 tsp honey


Method

  1. Thinly slice the red onion and place it in a small bowl. Add the vinegar, honey, and water. Stir to combine and set aside to pickle.

  2. Bring a large pot of water to a boil. Add the vermicelli noodles and cook according to the packet instructions. Drain, rinse under cold water, and set aside.

  3. Meanwhile, heat a drizzle of olive oil in a large frying pan over medium-high heat. Add the pork mince, breaking it up with a wooden spoon. Once the pork begins to brown, add the Chinese five spice, ground coriander, soy sauce, honey, minced garlic and chilli. Stir well to coat the pork and cook for another 5-7 minutes until golden and caramelised.

  4. For the dressing, finely chop the red chilli and garlic. In a small bowl, combine the chilli, garlic, fish sauce, lime juice, and honey. Mix well and set aside.

  5. Thinly slice the cucumber into half moons and roughly chop the cos lettuce. In serving bowls, arrange a bed of lettuce, followed by the noodles, cooked pork mince, cucumber slices, and pickled red onion.

  6. Top with fresh coriander leaves (or mint if preferred). Drizzle the prepared dressing over the bowl and serve with lime wedges on the side.
