Combing two of my favourite things - sushi and rice paper rolls. Give this a go for something fresh, easy and quick to make!
Serves: 2
Tuna mix:
3 x small tins tuna
3 tbsp mayonnaise
1 tsp soy sauce
1 spring onion, thinly sliced
Sprinkle of dried seaweed (optional)
6 rice paper rolls
Cos/mixed lettuce
1 carrot, julienned (or grated)
1 cucumber, julienned (or sliced)
1 avocado, sliced
1 tsp black sesame seeds
Wasabi, to serve
Soy sauce, to serve
Method
In a bowl, mix the tuna, mayonnaise, soy sauce, sliced spring onion and a sprinkle of dried seaweed if using.
When ready to assemble, dip three rice paper sheets briefly in warm water, then overlap them slightly on a flat surface horizontally.
Place a few lettuce leaves, some carrot, cucumber, the tuna mix and sliced avocado across the centre of the rice paper sheets. Sprinkle the back sesame seeds over the top.
Fold the sides of the rice paper in towards the centre. Carefully fold the top of the rice paper sheets down over the mixture and keep rolling towards you to seal completely. Slice into thick sushi-style pieces (or simply in half) and serve with soy sauce and wasabi.
