This one's for you my vegetarian and tofu loving friends. Sweet Chilli Tofu tacos. Believe me when I say these HIT. THE. SPOT. I am telling you, the herbs and spices on the tofu, the sweet chilli sauce, the cheese, the pickles... just everything about this recipe is delicious. It's such a quick mid-week dinner idea and a great vegetarian option! I have been obsessed with pickles lately and this recipe isn't the same without them. Oh and not a fan of tofu? Ingredients
For the tofu:
1 block of firm tofu
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp paprika
1 tbsp dried parsley
pinch of salt
8 mini tortillas
Mixed lettuce
Grated cheese
Pickles (I love bread and butter pickles)
Sliced tomato
2 tbsp's sweet chilli sauce
1/2 C greek yoghurt
Method
Start by slicing the tofu into 1cm thick strips.
Sprinkle the garlic powder, onion powder, paprika, parsley and a pinch of salt on a large plate and roll each piece of tofu in the mixture until covered. Set aside while you slice the tomato, wash your lettuce and grate the cheese.
Combine the sweet chilli sauce and greek yoghurt in a small bowl and set aside.
To cook the tofu, place a pan on medium heat. Drizzle some olive oil and cook the tofu on each side until golden (about 2-3 minutes on each side)
When you're ready to serve, warm up the tortillas in a dry pan or in the microwave between some paper towel.
To assemble, place down a spoonful of the sweet chilli sauce, along with the lettuce, tomato, pickles, tofu and grated cheese. Top with more of the sweet chilli sauce and serve!
