Sticky Date Cookies

Turn one of your favourite desserts into a cookie and you can have it any time of day, right? These are my sticky date cookies and dayuuuuuuuum they are GOOD! I actually cannot believe how much these taste like the real thing, AND they’re gluten free!! Pre-heat your ovens, something tasty is about to go dowwwwn.


Ingredients


1 C oat flour

11 dates (180g)

1/4 C coconut sugar

1/4 C olive oil

1 tsp cinnamon

1/2 tsp baking soda

1 Egg


Method

  1. Preheat your oven to 170’C.

  2. Remove the pit from the dates and cut each into quarters. Add them to a small saucepan along with the olive oil and sugar and place on medium heat. Stir occasionally until the dates soften and start to break down.

  3. Remove from the heat and add in the baking soda. Stir again and set aside to cool slightly.

  4. In a bowl, add the flour, cinnamon, date mixture and egg. Stir well until combined.

  5. Take a tablespoon of the dough and roll it into a ball. Flatten slightly with your hand and bake in the oven for 7-8 mins or until golden.

Note: these are the best when they’re warm so I recommend eating them once they’ve cooled slightly. They can go a little soft if they’re left out so eat them quickly which, let’s be real, won’t be a problem (otherwise simply place them in the oven to warm up)
