Spiced Lamb Gozleme with Mint Yoghurt

If you’re hosting and need an easy idea then you have to try these super easy spiced lamb gozleme. They're perfect for feeding a crowd and are so full of flavour, so if entertaining stresses you out, be sure to add this to your menu!

Makes: 6 gozleme

Ingredients

6 x Mission Foods Original Super Soft Wraps

2 tbsp olive oil

1 small brown onion, diced

½ red capsicum, finely diced

2 garlic cloves, finely chopped

1 tbsp tomato paste

4 tsp cumin

2 tsp paprika

1 tsp ground coriander

500g lamb mince (or beef)

1 cup fresh parsley, roughly chopped

1 heaped cup baby spinach, roughly chopped

100g fetta

½ cup cheese, grated

1 lemon, cut into wedges

Mint yoghurt:

¾ cup Greek yoghurt

½ tsp minced garlic

2 tbsp fresh mint, finely chopped


Method

  1. Heat a drizzle of olive oil in a large pan over medium heat. Add the onion and a pinch of salt, and cook for 2–3 minutes until softened.

  2. Stir in the capsicum and garlic, cooking for another minute.

  3. Add the tomato paste, cumin, paprika, and ground coriander to the pan and cook for 30 seconds until fragrant and the spices are well combined with the tomato paste.

  4. Add the lamb mince to the pan and cook, breaking it up with a spoon, until browned and fully cooked.

  5. Stir in the parsley, baby spinach, crumbled fetta, grated cheese, salt and pepper until well combined, then remove from the heat.

  6. To assemble, place one wrap flat on a clean surface. Spoon a generous amount of the lamb filling onto one half of the wrap, fold it over to form a semi circle, and press down lightly.

  7. Heat a drizzle of olive oil in a non-stick pan over medium heat and cook the gozleme for 3–4 minutes on each side, or until golden. Repeat with the remaining wraps and filling.

  8. To make the mint yoghurt, mix the Greek yoghurt, minced garlic, and finely chopped mint in a small bowl.

  9. Slice each gozleme into 4–5 strips and serve on a platter with the mint yoghurt, lemon wedges, and a sprinkle of fresh parsley for garnish.
