This soba noodle salad is right up there for an easy yet delicious side dish. It’s the perfect accompaniment to my sweet chilli and lime chicken or any protein of your choice!
Ingredients
1 pack soba noodles (270g)
1 large cucumber, julienned/finely sliced
2 carrots, julienned/finely sliced
1 red capsicum, finely sliced
1/2 red onion, finely sliced
Small bunch of fresh mint
1/2 cup roasted peanuts, coarsely chopped
Optional dressing
2 tbsp soy sauce
2 tsp rice wine vinegar
4 tbsp sweet chilli sauce
1 tsp maple syrup/honey
1 garlic clove, finely chopped
Method
Cook the soba noodles as per packet instructions, then rinse under cold water and drain. Combine the noodles, cucumber, carrot, red capsicum, onion and mint in a large bowl.
For the dressing, you can use the sauce leftover from the sweet chilli chicken (just be sure to remove some of the excess oil sitting on top) or combine the ingredients for the dressing for a super simple option. Dress the salad, toss to combine and then sprinkle over the roasted peanuts.
