Salmon Sushi Bowl

I have the perfect lunch option for you to try that is so easy to meal prep and will last in the fridge for up to 3 days. This salmon sushi bowl is not only super delicious, but it provides essential omega-3's, a great hit of fibre, healthy fats and protein to keep you full and satisfied. If you are someone who likes to meal prep, simply triple the recipe and you've yourself lunch for a whole 3 days! Your work lunches just got a whole lot tastier.


Serves: 1

Ingredients

1/2 cup cooked (and cooled) rice

1 tin salmon

1/4 cup edamame beans

1/2 carrot, grated

1/2 avocado, diced

1 tbsp mayonnaise

2 tsp soy sauce

Sriracha (as much as you can handle)


Seaweed snacks (4 sheets)

1 big handful mixed lettuce

1/2 cucumber, sliced

Black sesame seeds

Extra sriracha (for on top)





Method

  1. In a bowl, combine the rice, tinned salmon, edamame beans, grated carrot, diced avocado, mayo, soy sauce and sriracha, and stir until well combined.

  2. To a serving bowl, add the mixed lettuce, rice and salmon mixture and sliced cucumber. Finish with an extra drizzle of sriracha and some black sesame seeds and enjoy!

*if meal prepping, triple the recipe and keep the rice and salmon mixture stored in an air-tight container in the fridge. Then serve with the lettuce and cucumber the day of eating.
