Pumpkin and Chickpea Patties

These pumpkin and chickpea patties are such a delicious vegetarian lunch option to have prepped when you’ve got a busy week. And with only 6 ingredients, these couldn’t be easier to make!

Ingredients

1/2 butternut pumpkin

1/2 red onion

1 can chickpeas

1 egg

1 C plain flour

Salt and pepper

2 tbsp curry paste (I used panang but any curry paste will work!)


Method

1. Grate the pumpkin, finely diced the onion and rinse/drain the chickpeas.

2. Add everything to a large bowl and mix until well combined.

3. Preheat a large pan on medium heat with a drizzle of olive oil. Take a heaped tablespoon of the mixture and flatten in the pan. Cook for about 2 minutes on each side or until golden.
