Love Chinese takeaway but don’t want to spend the $$?
This pork chow mein is the perfect recipe to try. There’s minimal prep time, it’s budget friendly and most importantly, so delicious!
Ingredients
Stir-fry sauce:
3 tbsp soy sauce
7 tbsp oyster sauce
2 tsp rice wine vinegar
1 tsp honey
500g lean pork mince
1 small white onion, sliced into wedges
1 carrot, finely sliced
1/2 red capsicum, roughly chopped
1 bunch bok choy, roughly chopped
3 garlic cloves, chopped
1 thumb size piece of ginger, finely sliced
1 packet (200g) brown rice vermicelli noodles
In a small bowl, combine the soy sauce, oyster sauce, rice wine vinegar and honey and stir well to combine.
Cook the vermicelli noodles as per packet instructions, then rinse under cold water, drain and set aside. (do not overcook them as they will continue cooking in the pan).
Preheat a large pan on high heat. Add a drizzle of olive oil then add the pork mince to the pan, spreading it out on the base of the pan. Allow this to cook for 3-4 minutes without stirring until the bottom turns golden brown. Stir briefly, then remove from the pan.
In the same pan on high heat, stir-fry the onion and sliced carrot for 2 minutes, before adding the capsicum, the stems of the bok choy, garlic and ginger. Stir fry for 2-3 mins until the veggies start to soften.
Add the pork mince back to the pan along with the sauce, the leaves of the bok choy and the vermicelli noodles. Toss until everything is coated in the sauce and serve. Sprinkle with some sesame seeds over the top and enjoy.
