These Peanut sesame rice bowls are cost effective, delicious, so easy to prepare and the ultimate lunch option for a busy week. We love that.
Ingredients
1 cup brown rice, uncooked
2 cups white cabbage, finely shredded
2 chicken breasts
1 cup edamame beans
1 carrot, grated
1 cucumber, finely sliced
Black sesame seeds
Peanut sesame dressing:
6 tbsp peanut butter
4 1/2 tsp soy sauce
3 tsp white wine vinegar
1 tsp sesame oil
3 tsp maple syrup/honey
3 tbsp water
Method
1. Bring a large pot of water to the boil for the rice. Cook the rice for 20-22 minutes, then drain and set aside.
2. Meanwhile, bring another saucepan of water to a gentle simmer for the chicken. Add the chicken breasts and cook for 13-15 minutes. Remove the chicken from the water and set aside to cool slightly, then finely shred. In the same saucepan, add the edamame and cook for 2 minutes then drain and set aside.
3. In a small bowl, combine the ingredients for the dressing and stir well until combined.
4. In a large bowl, add the rice, shredded cabbage, edamame, carrot, cucumber, shredded chicken and sesame seeds. Drizzle over the sauce and toss well until everything is coated.
5. Serve between bowls and top with more sesame seeds.
