This peach and burrata salad has to be the simplest side to put together. The only cooking required for this recipe is grilling the peaches, then its just a matter of layering everything on a serving dish, it’s that easy! Burrata is such a crowd pleaser, so be sure to try this recipe!

Ingredients
4 peaches, cut into thick wedges
1 sml bag rocket
Handful of fresh basil
1/2 small red onion, thinly sliced
1 punnet cherry tomatoes
1 ball of burrata
Balsamic glaze, to serve
olive oil, to serve
Method
Grill the peaches on medium heat in a dry pan until lightly charred and allow to cool slightly.
To assemble, place the rocket, red onion, cherry tomatoes, basil and peaches on a serving plate. Carefully place the burrata on top and drizzle with olive oil and balsamic glaze. Sprinkle over some salt and it’s ready to serve!
