I bring you this heavenly passionfruit pudding. It’s the ultimate dessert that everyone will love so if you’re on dessert duty, save this recipe!
Serves 4-6
Ingredients
½ cup caster sugar
1 cup self-raising flour
½ cup milk
1 egg
1/3 cup butter, melted
2 x passionfruits
Passionfruit topping
¼ cup caster sugar
2 tbsp corn flour
1 cup boiling water
1 x passionfruit
Method
Preheat your oven to 180°C.
Whisk the flour and sugar in a large bowl. In a separate bowl, whisk the milk, egg and melted butter. Add the wet ingredients to the dry and whisk until just combined, before adding in the passionfruit pulp. Pour the batter into a greased dish.
In a small bowl, combine the sugar and cornflour. Sprinkle this over the top of the pudding. Carefully pour the boiling water over the pudding over the back of a large spoon. Drizzle over the remaining passionfruit pulp and bake in the oven for 25-28 minutes. Serve with a dusting of icing sugar and a scoop of vanilla ice cream, and enjoy!
