DROP EVERYTHING, coz I’m about to drop this recipe for my uber delicious Jam drops. These are a favourite when it comes to bakery treats from woolies because well... happiness can be bought in small round plastic containers. But not anymore, because these my friends are next level. A better-for-you alternative to a classic. Trust me, you won’t want to stop after 1 and hey, I’m not here to judge.
Ingredients
1 C spelt flour
1/2 C oat flour
1/4 C desiccated coconut
2tsp baking powder
1/3 C softened butter
2 tbsp coconut sugar
1 egg
1 tbsp maple syrup (or 2 for extra sweetness)
1 tsp vanilla extract
About 4 tablespoons of strawberry jam
Method
Beat the butter and sugar until pale and fluffy.
Add vanilla, maple syrup and egg. Fold in oat flour, spelt flour, baking powder and coconut.
Shape a tablespoon of the mixture into discs and indent them with a teaspoon. Fill with strawberry jam, sprinkle with a little extra coconut and bake in the oven on 180 for about 15 mins or until golden.
