Dust off your slow cookers because WINTER IS COMING. It’s a love hate relationship. I really hate the cold, but love the warm and cosy meals. Who’s with me?!
Ingredients
1kg chuck steak, cubed
1 onion, sliced
3 carrots, cut into 3 pieces
3 garlic cloves
1.5 tbsp thyme
3 heaped tsp’s tomato paste
Generous pinch of salt
About 1L water
8 mushrooms, chopped in quarters
Method
Turn a pan on high heat and brown the chuck steak in a pan. You want to sear the meat quickly on each side not cook it all the way through.
Add to the slow cooker, along with everything else except for the mushrooms. Give it a good stir and turn on low for 6-8 hours or until the meat is falling apart.
Add the mushrooms with about an hour to go. If you like a thicker sauce, add a heaped tbsp of corn flour with a dash of cold water and stir, then add to the slow cooker and stir again.
Cook for a further 20 mins. Serve with some mashed potato and steamed greens
