The OG Easter treat, in muffin form, and without the dried fruit because well, grapes belong on a vine in your fridge not dried and in your buns!
This recipe is such a good one to make for Easter, especially because they're extra generous with the spice and are oh so fluffy!
Ingredients
100g unsalted butter, at room temperature
1/2 cup coconut sugar
1/2 cup almond meal
1 1/2 cups wholemeal flour
2 tsp baking powder
Pinch of salt
2 1/2 tsp mixed spice
1 1/2 tsp cinnamon
2 eggs
3/4 cup almond milk
1/2 cup Icing sugar
1 tsp water
Method
Preheat your oven to 180°C.
Beat together the sugar and butter until light and fluffy.
In a separate bowl combine the flour, almond meal, baking powder, salt and spices and stir to combine. Sift the dry mixture into the butter and sugar then add the eggs and almond milk, and beat again to combine. *If you want to add dried fruit, now would be the time (I won’t judge).
Spoon into muffin tray and bake for 15-20 mins or until a skewer comes out clean. Set aside to cool.
For the crosses, combine the icing sugar and water, adding a touch at a time so that it’s thick but drizzle-able. Wait for the muffins to cool completely before piping the crosses (I used a seal-lock bag for this).
