Greek Lamb Gyros with Potato Chips

Homemade gyros have never been easier! With just two ingredients, these soft and fluffy flatbreads make the perfect base for juicy Greek-style meatballs. Add a generous dollop of creamy tzatziki and salad, and you’ve got a super tasty meal for the whole family! Whether it’s a quick weeknight dinner or a weekend feast, this recipe brings all the delicious flavours of a classic gyros—made simple at home!


Serves: 4-6

Flatbreads:

2 cups self-raising flour

1 3/4 cups greek yoghurt

Pinch of salt


Tzatziki:

1 cup greek yoghurt

1 tbsp dill, finely chopped

Juice of 1/2 lemon (the remainder cut into wedges, to serve)

1/2 cucumber, grated and excess water removed

1/2 tsp garlic, minced

salt and pepper


Greek meatballs:

500g lamb mince

2 heaped tbsp’s bread crumbs

2 tsp paprika

3 tsp oregano2 tsp onion powder

2 garlic cloves

1 egg

Salt and pepper

1 zucchini, grated and excess water removed


Potato chips:

3 large potatoes

Olive oil

Salt


Mixed lettuce

Cherry tomatoes, halved

Pickled red onion

hummus (optional)


Method

Flatbreads:

  1. In a bowl, mix the self-raising flour, Greek yoghurt, and a pinch of salt until a dough forms. Divide into 4 large (or 6 medium) portions. Roll the dough out on a well-floured surface (around 3mm thick). Transfer to a pre-heated dry pan and cook over medium heat for 1-2 minutes per side until lightly golden. Remove from the pan and cover with a clean tea towel while you cook the rest of the flatbreads.

Tzatziki:

  1. In a bowl, combine the Greek yoghurt, dill, lemon juice, grated cucumber, garlic, salt, and pepper. Stir well.

Meatballs:

  1. In a large bowl, mix the lamb mince, breadcrumbs, paprika, oregano, onion powder, garlic, egg, salt, pepper, and grated zucchini. Roll into small meatballs. Spray with olive oil and air fry at 200°C for 8-10 minutes, or pan-fry over medium heat until golden and cooked through.

Potato chips:

  1. Meanwhile, cut the potatoes into chips. Toss with olive oil and salt, then air fry at 200°C for 15-20 minutes, shaking halfway, until crispy and golden. (You can also bake these in the oven).

  2. To assemble, take a flatbread and layer some tzatziki on the base, followed by the lettuce, cherry tomatoes, pickled red onion and a few of the meatballs. Add more tzatziki and hummus (if using) and serve with the potato chips.
