This Greek Bowl is a fresh, flavourful, and satisfying meal packed with Mediterranean goodness. Juicy turkey meatballs pairs perfectly with creamy tzatziki and golden potato chips. It's a delicious, wholesome dish that’s so easy to make!
Greek meatballs:
500g turkey mince
2 heaped tbsp’s bread crumbs
2 tsp paprika
3 tsp oregano2 tsp onion powder
2 garlic cloves
1 egg
salt and pepper
1 zucchini, grated and excess water removed
Salad:
1 cos lettuce
1/2 punnet cherry tomatoes
3/4 cup kalamata olives
Pickled red onion
Tzatziki:
1 cup greek yoghurt
1 tbsp dill, finely chopped
Juice of 1/2 lemon (the remainder cut into wedges, to serve)
1/2 cucumber, grated and excess water removed
1/2 tsp garlic, minced
salt and pepper
Potato chips:
3 medium potatoes
Olive oil

Method
Meatballs:
In a large mixing bowl, combine the turkey mince, breadcrumbs, paprika, oregano, onion powder, minced garlic, egg, salt, pepper, and grated zucchini. Roll the mixture into meatballs (about 1 tablespoon each). Lightly spray with olive oil and place in an air fryer basket. Air fry at 200°C for 8–10 minutes or until golden brown and cooked through (you can also cook these in the oven or pan).
Potato chips:
Cut the potatoes into chips and toss with 2 tablespoon of olive oil and a pinch of salt. Air fry (or place in the oven) at 200°C for 12–15 minutes, shaking halfway, until golden and crispy.
Tzatziki:
In a small bowl, mix Greek yoghurt, dill, grated cucumber, minced garlic, salt and pepper. Stir until well combined and set aside.
Salad:
Chop the cos lettuce and halve the cherry tomatoes. Arrange in your serving bowls with the olives and pickled red onion.
To finish, divide the turkey meatballs between bowls, and add a generous dollop of tzatziki. Serve with the chips and a lemon wedge.
