My ultimate lazy gal dinner are these delicious grilled fish tacos. They’re fresh, so easy to make and on the table in under 30 minutes. Perfect for when you want something easy but still packed with flavour!

Ingredients
Serves: 2
6 corn tortillas
Tomato salsa
Mixed lettuce
Tomato
2 barramundi or basa fillets
Taco seasoning (I use @mingleseasoning)
Avocado crema:
1/2 avocado
2 tbsp greek yoghurt
Juice from 1/2 lime
Pickled red onion:
1 red onion
3 tsp vinegar
1 tsp honey
2 tsp water
Method
Thinly slice the red onion and place in a small bowl. Add the vinegar, honey, and water. Mix well and set aside to pickle.
Pat the fish dry and drizzle with olive oil. Sprinkle both sides with taco seasoning and transfer the fillets on a lined tray. Place in the oven for 7-8 minutes or until just cooked through. Once cooked, flake into large chunks.
In a small bowl, mash the avocado, and add the Greek yoghurt and lime juice. Season with salt to taste.
To assemble, heat the tortillas in a dry pan or in the microwave. Layer the tomato salsa, lettuce, sliced tomato, and flaked fish. Top with the avocado cream and the pickled red onion, and enjoy!
