Ingredients
1 ½ cups plain flour
¼ cup sugar
5 tsp ground ginger
¼ tsp bicarb soda
½ cup butter, melted
2 tbsp maple syrup
½ tsp vanilla extract
1 egg
½ cup macadamias, roughly chopped
Method
In a bowl, whisk together the flour, sugar, ground ginger and bicarb soda.
Make a well in the centre and add the melted butter, maple syrup, vanilla extract and egg and whisk slightly before changing over to a wooden spoon and mix until a cookie dough forms. Add in the chopped macadamias.
Take a tablespoon at a time and roll into a ball. Place them on a lined baking tray and press down to flatten (around 1cm thick). Bake for 12-14 minutes or until lightly golden, then allow to cool.
Once cooled, take a gift box and layer in some tissue paper on the base of the box. Place the cookies inside, put the lid on top, and use some Christmas ribbon and a gift tag to decorate as desired.
