Been asked to bring a dish and have no idea what to make?! Then make this!! It’s my garlic prawn and burrata pasta salad and it’s the crowd pleaser everyone will love!

Ingredients
100g rocket
2 cups pasta (raw)
220g garlic prawns
1 burrata ball
1/2 punnet cherry tomatoes, halved
1/2 bunch fresh basil
1/4 cup toasted pine nuts
Balsamic vinegar
Olive oil
Juice of half a lemon
Salt and pepper
Method
1. Boil the pasta in salted water according to the packet instructions. Once cooked, drain and set aside to cool slightly.
2. Cook the garlic prawns in a pan over medium heat until fully cooked through. Let them cool slightly.
3. In a serving bowl, layer the rocket, cooled pasta, cherry tomatoes and garlic prawns.
4. Place the burrata ball in the centre.
5. Scatter the fresh basil leaves and pine nuts around.
6. Finish with a drizzle of olive oil, the balsamic vinegar and the lemon juice. Season with salt and pepper to taste.
7. Gently break open the burrata when serving to let the creamy centre mix with the salad.
