Run, don’t walk. Here is my recipe for Fudgy chocolate brownies. That is all.
2 eggs at room temperature
2/3 C coconut sugar
1/3 C cacao
1/2 C almond meal
1 C plain flour
1/2 tsp baking powder
1 shot of coffee (30ml)
1 tsp vanilla
1/2 C butter
3/4 C choc chips
Method
With electric beaters, beat sugar and eggs together for about 2 minutes or until light and fluffy.
Meanwhile, melt the chocolate chips and butter together in a small bowl. To the sugar and egg mixture add the flour, almond meal and baking powder and fold in briefly.
Add the chocolate mixture along with the coffee and vanilla, and fold until incorporated.
Pour into a small rectangular tin lined with baking paper and bake at 180 degrees C for 20-22 mins.
Note: do not overcook or you won’t achieve the fudgy goodness you want in a good brownie!
