Ingredients
Chinese five spiced pork:
1 pork shoulder
4 teaspoon Chinese five spice
4 tbsp soy sauce
2 tbsp garlic
2 tbsp ginger
3 tbsp honey
1/2 onion, diced
3 tbsp Shaoxing wine
For the bbq sauce:
2.5 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sweet chilli
1 tbsp shaoxing wine
3 tsp honey
1 tsp garlic
1 tsp ginger
For the pickled veggies:
1 carrot
1 cucumber
2 tsp sugar
1.5 tbsp white vinegar
Method
Cut the pork shoulder into large pieces (about 5cm) and trim any excess fat. Sprinkle the Chinese five spice over the meat and toss to coat. Add everything to the slow cooker and turn on low for 7-8 hours or until the pork starts to shred apart.
For the BBQ sauce, add everything to a small saucepan and bring to a simmer. Leave on the heat until it has thickened and reduced by about 1/3.
Julienne the cucumber and carrot. In a small bowl, combine the sugar and vinegar, then add the veggies and let sit for at least 10 minutes.
Serve the shredded pork and pickled veggies on a long crusty bread roll and serve with the bbq sauce and some kewpie Mayo.
