Need a dessert option for your guests that wont take too much time to prepare? I've got just the thing! These Ferrero rocher baked cheesecakes are so decadent and delicious and make for the perfect dessert option if you’re entertaining!

Ingredients
Base:
2/3 packet butternut snap cookies (84g)
1/3 cup butter, melted
Filling:
250g cream cheese
¼ cup greek yoghurt
¼ cup caster sugar
1 tsp vanilla extract
2 eggs
10 Ferrero Rochers (+ more for decorating)
Method
Preheat your oven to 160°C.
In a food processor blitz the cookies until a fine crumb forms. Add the butter and blitz again until combined (you can also crush the biscuits in a zip-lock bag and stir in the butter).
Line a muffin tray with muffin cases and place a tablespoon of the mixture inside. Use a small measuring cup to press down firmly.
Roughly chop the Ferrero rochers. In a large bowl, add the cream cheese, Greek yoghurt, sugar, vanilla extract, eggs and beat well until smooth. Stir in the chopped Ferrero rochers. Place 2 tablespoons of the mixture in each muffin case. Place in the oven to bake for 17-19 minutes or until just set. Allow to cool, then place half a Ferrero rocher on top of each cheesecake.
Note: these are best served at room temp. If making ahead of time, remove from the fridge 30 mins before serving.
