These egg bites are perfect for meal prep, full of veggies and are an all-round tasty snack or lunch option you can pack on the go.
Ingredients
6 eggs
2 heaps tbsp Greek yoghurt
5 pieces shortcut bacon
2 spring onions
1 small zucchini, grated
1 handful of baby spinach
1/2 block feta
Pepper
Method
1. Whisk the eggs and Greek yoghurt until lump free.
2. Add the remaining ingredients, stir to combine and divide between muffin cases.
3. Bake in the oven 8-10 mins on 180’C (if making mini’s) or about 20-23 mins for normal size muffins.
4. Allow to cool and store in an airtight container and enjoy throughout the week!
