Easter Caramello Rock Cakes

These are a cross between a cookie and a cake, so you simply can't go wrong, especially when you've got Caramello Easter Eggs scattered throughout!


Ingredients

1 cup self-raising flour

1 serving (30g) True Vanilla WPI (can sub for more flour)

1/4 cup caster sugar

1/3 cup butter, melted

1 egg

2 tbsp milk

6 Caramello Easter eggs, roughly chopped










Method

  1. Preheat your oven to 180°C.

  2. In a large bowl combine the flour, Vanilla WPI90 and sugar.

  3. Add the egg, milk and butter and mix again until a cookie dough forms.

  4. Add the chopped Caramello Easter eggs to the bowl and gently fold until mixed in.

  5. Take a tablespoon of the mixture at a time and place on a large lined baking tray.

  6. Bake for 12 mins or until lightly golden. Allow to cool slightly and enjoy!
