The easiest and most delicious meatballs to have on a busy weeknight. Pair them with some basmati rice and green veggies and BOOM. Dinner. Is. Done!
Ingredients
Meatballs:
500g lean pork mince
1 grated carrot
1 tbsp soy sauce
Dash of white pepper
Handful of coriander
1 can coconut milk (400ml)
2 heaped tbsp red curry paste
1 brown onion, diced
Generous pinch of salt
Method
1. Combine everything for the meatballs in a large bowl. Take a tbsp of the mixture and roll into small meatballs.
2. Preheat a pan on medium heat and drizzle with a little olive oil. Add the meatballs and cook for around 5 mins until browned but not completely cooked through. Add the diced onion and sauté for a further 2 mins until softened.
3. Add in the curry paste and cook for 30 seconds before adding the coconut milk and salt. Simmer for 8-10 mins until the sauce has thickened.
4. Serve with steamed rice and green veggies
