These cinnamon oat cookies tick all the boxes. They're crunchy, chewy and will smack you in the face with their cinnamon-y goodness!
Ingredients
1/2 C coconut sugar
3/4 C 25% less fat butter
1 egg
1/2 tsp vanilla paste
1 C rolled oats
1 1/4 C plain flour
1 tsp baking powder
Pinch of salt
3 tsp cinnamon
Method
Preheat oven to 180'C.
With electric beaters, cream the butter and coconut sugar until pale.
Add the egg and vanilla and whisk until combined.
Combine the dry ingredients in a separate bowl and add to the wet mixture. Stir until combined.
Take a tablespoon of the dough and roll it into a ball. Place on a baking tray lined with baking paper and flatten with your hands.
Place in the oven for 10-15 minutes until golden brown.
