Chipotle Chicken Mexican Bowls

It’s time to spice up your family dinner with these chipotle chicken Mexican bowls. These are such a great budget-friendly meal for the fam and are packed full of flavour. Let this be your reminder that you CAN make friends with salad and that healthy eating can be both exciting and next level delicious.


Ingredients

1kg chicken drumsticks

1 white onion

1 tbsp ground cumin

1/2 tbsp ground paprika

generous pinch of salt

3 garlic cloves

3 tbsp chipotle in adobo sauce (use a little less if cooking for kids)

1 tbsp tomato paste

1/2 can crushed tomatoes


Serve with;

Brown rice

Iceberg lettuce

Tomatoes

Cucumber

Charred corn

Avocado

Cheese, grated

Fresh lime

Pickled jalapeño's (optional)


Method

  1. Place the diced onion, chicken drumsticks, cumin, paprika, salt, chipotle sauce, tomato paste and crushed tomatoes in your slow cooker. Turn the slow cooker to low and cook for 3-4 hours or until the chicken is falling off the bone. Remove all of the bones from the slow cooker and ensure the chicken is coated in the sauce.

  2. Serve the chipotle chicken in a bowl along with the brown rice, lettuce, tomatoes, cucumber, charred corn, avocado, cheese and pickled jalapeño (if using). Squeeze some fresh lime over the top and dinner is served.
