Cauliflower Mac and Cheese

This is what you get when you combine the good old cauliflower cheese and Mac and Cheese. It's a much lighter, healthier option and I guarantee you it is delicious. Once you start, it's hard to stop, trust me. Throw a salad together or steam some veggies and this is dinner sorted in minutes, I promise the whole fam will love it!


Ingredients


400g cauliflower, cut into florets

2 garlic cloves, finely chopped

1/2 onion

400ml skim milk

65g cheese (bit over half a cup)

Salt and pepper

Two packets of Vetta's Macaroni Ready Pasta










Method

  1. Place the garlic into a saucepan with a little olive oil and cook for 30 seconds until fragrant.

  2. Add the milk and cauliflower florets. Bring to the boil and then let that simmer until the cauliflower has softened (about 10mins).

  3. Let it cool slightly, before placing in a blender along with the onion, salt, pepper and cheese. Blend until smooth.

  4. Heat the pasta in the microwave and add to a bowl along with half the cauliflower cheese mixture.

Tip: save the other half of the cauliflower cheese for potato bake or cook some extra pasta for leftover Mac and cheese.
