Who said salads are boring? Not moiii that’s for sure. This is my Bacon and Avocado salad with a creamy ranch dressing. Simple, but oh so delicious. The homemade croutons are insanely good and a great addition for some crunchy goodness. This salad is perfect for a mid week dinner OR for taking around to your friends place when your asked to bring a plate. Give this a go and let me know if you make it!
Ingredients
5 slices of shortcut bacon, diced
1 avocado, sliced
1/4 of a turkish bread loaf
Drizzle of olive oil
A sprinkle of dried Italian herbs
1/2 block of crumbly danish feta
1/2 punnet of cherry tomatoes
2 x Cos lettuce
Ranch dressing:
1/2 C Greek yoghurt, I love @yoproau
Juice of half a lemon
1/4 tsp minced garlic
1/4 tsp onion powder
1/2 tsp dried dill
1/2 tsp dried parsley
Dash of salt and pepper
4 tsp water
Method
Preheat your oven to 180. Cut the Turkish bread into small cubes and place on a baking tray lined with baking paper. Drizzle some olive oil, sprinkle generously with some dried Italian herbs and some salt. Toss to coat each piece of bread and bake in the oven for 5-8 minutes or until golden brown and crunchy. Set aside to cool.
Meanwhile, heat a large pan on medium heat and cook the bacon until golden and slightly crispy.
Place all the ingredients for the ranch sauce in a large jar. Stir well to combine and set aside.
To assemble the salad, wash and slice the lettuce and cut the tomatoes in half. Place the lettuce and tomato on a big serving plate, sprinkle the bacon and feta over the top, followed by your homemade croutons. And lastly, fan out the sliced avocado on top!
A tip: wait until serving to drizzle the ranch dressing over the top because NO ONE likes a soggy crouton
