Spiced chicken and rice bake with crumbled feta, and a Greek salad

30 minutes, that’s all you need to make this! How good right!? A super quick and easy mid week meal. This is so yum with the spiced chicken, fluffy rice and fresh salad on the side. Enjoy my friends!


Ingredients

500g chicken tenderloins

2 tsp cumin

1.5 tsp paprika

1/2 tsp ground coriander

1 tsp onion powder

Salt

Olive oil

1 small onion, diced

2 garlic cloves

1.5 C jasmine rice

3 C boiling water

2 chicken stock cubes

1/2 block crumbly feta

Handful of parsley

Greek salad:

Punnet of cherry tomatoes

1/2 red onion

1 Lebanese cucumber

Small handful of olives



Method

  1. Preheat your oven at 180. Dice a small onion, 2 cloves of garlic and place them in a baking dish along with a drizzle of olive oil. Cover with foil and place in the oven for 10 mins. Meanwhile make the spice rub for the chicken.

  2. Combine the spices and salt in a bowl and toss the chicken to coat. Place a pan on high heat and sear one side of the chicken for 1-2 mins (you don’t want to fully cook the chicken here, just brown one side).

  3. To the baking dish, add the rice, boiling water and stock cubes and stir well until the stock cube has dissolved. Place the chicken on top (seared side up). Cover with foil and place in the oven for 20 minutes.

  4. While that’s cooking, chop the tomato, cucumber, red onion and olives and add to a bowl. Also chop the parsley and place it in a bowl along with a drizzle of olive oil and salt, and set aside.

  5. After 20 minutes, take the baking dish from the oven and crumble the feta over the top of the chicken. Place back in the oven covered for 5-10 minutes.

  6. Once cooked, fluff the rice up with a fork. Serve the rice and chicken, and serve with the Greek salad, parsley, Greek yoghurt and a lemon wedge.
