Fancy Chinese for dinner? Feel like staying in? THEN COOK IT YOURSELF! Sorry, I’ll stop yelling. But seriously ya’ll, this beef noodle stir-fry will really hit the spot. It takes no time at all and it means you can stay in, stay warm, stay healthy and satisfied!
Serves 6
Ingredients
1 packet of Wokkin Hokkien noodles
500g beef mince
1/3 C soy sauce
1/3 C oyster sauce
1/3 C sweet chilli sauce
1 tbsp vinegar
4 garlic cloves
1/2 green cabbage (small)
1 bunch bok choy
1 onion
2 spring onions
1 carrot grated/thinly sliced
Method
Combine the oyster sauce, soy sauce, sweet chilli and vinegar in a small bowl. Slice the cabbage, bok choy, onion and carrot. Chop the garlic and spring onions and set aside.
Heat a large frying pan on rapid high heat.
Add the beef mince to the pan, spread out with a wooden spoon and wait for the water to evaporate before touching it again. It should be really golden brown underneath.
Once the meat has browned, add the garlic and onion and cook for 2 mins. Add the bok choy, cabbage and carrot and stir. Note: If any water has come out of the bok choy while cooking, keep on the heat until it has evaporated.
Carefully break up the noodles with your hands and add to the pan along with the sauce and spring onions. Toss everything together until the noodles are coated in the sauce, and serve.
