Anzac biscuits are one of my favourites. So on Anzac Day of course I’ve got a batch of these on hand and I highly recommend you do too! They’re crunchy, chewy and so so delicious! You can have these in your hot little hands within minutes, so get on it!

Ingredients
1 C rolled oats
1 1/4 C plain flour
3/4 C shredded coconut
1/2 C coconut sugar
1/2 tsp bicarb soda
1/2 C melted butter
2 tbsp maple syrup
2 tbsp hot water

Preheat oven to 170.
Combine all of the dry ingredients in a large bowl.
Add the wet ingredients and mix well to combine.
Take a tablespoon of the mixture and roll into balls. Place on a baking tray lined with baking paper and flatten them with the palm of your hand.
Place them in the oven for 15 mins until golden.
