Salted White Chocolate and Macadamia Cookies

CANCEL YOUR PLANS, I have another idea. It starts with a C and ends in OOKIES.... because why the heck not?!

These are my Salted White Chocolate and Macadamia Cookies; crunchy on the outside, soft on the inside, the perfect combo! And let me tell ya, they are moorish. Honestly, when I was photographing these, they were staring me right in the face. One even crawled into my mouth....


Ingredients


1/2 C + 1 tbsp 25% less fat butter

1/2 C coconut sugar

1 egg

1 tsp vanilla

1 tbsp maple syrup

1 3/4 C plain flour

1 tsp baking powder

Pinch flakey salt + more for on top

1/3 C macadamias, chopped into small chunks

1/3 C white chocolate chips









Method

  1. Preheat oven to 180. In a large bowl, whisk the butter and sugar together until pale. Whisk in the egg, vanilla, and maple syrup.

  2. Add the flour, baking powder and salt and mix well to combine. Fold in the white choc chips and macadamias.

  3. Take about a tbsp of the cookie dough, roll it into a ball and flatten out on a tray lined with baking paper.

  4. Sprinkle a pinch of flakey salt on top of each cookie and bake in the oven for 10 mins until golden brown.
