This is my chunky basil pesto, a staple in my fridge at the moment. It’s so versatile and delicious, I’ve been loving it on my toasted wraps for lunch 🙌🏻 it’s a real game changer. What really makes this pesto the besto are the roasted cashews though. Trust me, it takes this pesto to a whole new level.
Ingredients
1 bunch of fresh Basil
2 garlic cloves
1 tbsp of Parmesan cheese
1/2 C roasted cashews (I roasted some raw cashews in the oven for 10 mins on 180).
Good pinch of salt and pepper
Generous drizzle of olive oil (about 1/4 C) or until it reaches your preferred consistency
Method
Blitz everything together in a food processor until it reaches your preferred consistency, it’s that’s simple!
